Ah, broccoli.....another green vegetable full of essential vitamins and minerals. High in Carotenoids (which may assist eye health) this regularly available vegetable is best stir-fried or steamed so as not to lose too many nutrients. DO NOT BOIL!
Here is a recipe idea that Katrina used last week to feed her very active 2 year old boy.
Broccoli, Zucchini & Haloumi Fritters
What you need;
• 1 Zucchini (grated)
• 1/4 head of Broccoli (finely chopped)
• 100g Organic Haloumi Cheese (cubed)
• 3 eggs
• 1/2 cup Almond Meal
• Salt & Pepper to taste
• Organic Coconut Oil for cooking
What to do;
• Chuck it all in a bowl
• Mix to combine
• Cook in coconut oil as if you were making pancakes
• ENJOY :)
